White chocolate and macadamia biscuits
Recipe from Phillip Cunningham Mount Druitt NSW
Ingredients:
- 125g butter, softened
- 3/4 cup brown sugar
- 1 teaspoon vanilla essence
- 1 egg
- 1 cup plain flour
- 1 cup self-raising flour
- 1 cup white chocolate buttons
- 1/4 cup chopped macadamia nuts
Directions:
Cream butter and sugar.
Add egg and vanilla essence and mix in well.
Add plain flour, and self-raising flour, and mix well.
Lastly stir in white chocolate buttons and chopped macadamia nuts. Place spoonfuls on a baking tray allowing some room to spread.
Bake at 175 degrees celsius for 15 minutes until light golden and firm to touch.
Leave on the tray for a few minutes then transfer to wire rack to cool.
Delicious when eaten warm.
Makes about 18.
Variations:
Chocolate and ginger
Use 1 cup dark chocolate chips and add 2 tbs cocoa with flour. Replace nuts with chopped glace ginger
