Macadamia Crusted Chicken Medallions

Wake up your loved ones to the taste of these wonderful macadamia nut pancakes.  These are a great way to start any day or save them for the weekend for a special brunch.

Ingredients:
  • 2 skinless chicken breasts

  • ¼ cup macadamia nuts (roasted, salted and crushed)

  • ½ cup flour

  • 1 egg

  • ¼ cup milk

  • 4 tablespoons pommery (or dijon) mustard

  • 1 tablespoon mayonnaise

  • 1 large Spanish onion

  • 1 clove garlic, sliced

  • 1 roasted red pepper, thinly sliced

  • 1 bunch fresh spinach

  • 1 tablespoon butter

  • Olive oil

  • Salt and black pepper, to taste

Directions

Mix together flour, macadamia nuts and season with salt and pepper. Make egg dip for chicken breast by mixing one egg with milk and half the mustard. Season with salt and pepper. For mustard sauce, mix remaining mustard and mayonnaise, and thin with water.

Slice the onion thinly and sauté in 1 tablespoon olive oil for about 4 to 5 minutes until caramelised. Remove from pan.

Slice the chicken breasts into 3 horizontal slices. Pound slightly between plastic wrap or waxed paper then season with salt and pepper. Flour chicken pieces and soak in the egg dip, then flour again. Sauté for 3 minutes on each side until golden brown. Remove from pan to a baking sheet and bake at 375 degrees for 3 to 4 minutes or until juices run clear.

Drain excess oil from the pan, and add 1 tablespoon olive oil and sliced garlic. Stir until golden. Add red pepper and spinach, sautéing until spinach is wilted. Season with salt and pepper and transfer to the centre of a serving plate. Add 1 tablespoon butter to the pan. When melted, add the onions and cook briefly. Place on top of the spinach.

Remove the chicken from the oven and place neatly around the vegetables. Spoon the mustard sauce around and serve.
